Method

  1. Chill the water to below 6°C.
  2. Combine all ingredients other than the flaked fat until a smooth paste is formed.
  3. Add flake fat and TVP and mix until combined but don’t overmix.
  4. Put the mixture on a prepared tray lined with greaseproof paper & steam cook for 25 mins @ 100°C - followed by a blast freeze.
  5. Then coat with cornflour, soya milk and breadcrumbs (golden & panko mixed).
  6. Fry @ 190°C until golden brown.
