What are flaked fats?
Flaked fats are solid flakes of pure fat, which are easy to use and deliver a wide range of functional benefits. They are especially good for pizza bases, focaccias and flatbreads.
Flaked fats are cleaner, safer and faster to use than solid blocks of fat, and are often used to improve the texture of finished goods. Depending on the product or process, flaked fats can make your product lighter, airier, crispier or creamier. They can be used on their own or in combination with other oils and fats. Fat flakes are great carriers of flavour and colour, and are available in different thicknesses, and with added natural colour or flavour. They are also perfect for creating fat barriers preventing moisture migration.
